Marie Redmond, owner of Redmond's Red Deer Farm, explained the best way to cook farm-raised venison.
"It's a very lean tender meat with a mild flavor. It should be cooked quickly on high heat as you would any extra lean meat, and always served rare to medium. Well-done meat may be dry because it is so lean. Venison does not require tenderizing but if you wish, marinate briefly in beer or Italian dressing for juicy steaks, and also cook steaks just before serving when everything else is ready. Be creative, venison has endless culinary possibilities, not only can you grill it stand alone, make kebabs, but substitute it for a meat source in most any recipe - the flavoring result will be fabulous."

Originally operating as a dairy farm for 30 years, owner Marie transformed the business into a red deer and stag farm. Growing up on a farm, she was inspired to start her own, driven by the philosophy that “agriculture is something that’s in your blood.” With May quickly approaching, their 200 deer are about to increase in number as Spring is a time for the birth of baby fawns. They’re preparing to welcome about 75 babies!
A typical day on the farm involves feeding the deer in the morning with their very own meadow-grass hay they produce themselves along with minerals and water. For the past 10 years, Saturdays year round have been reserved for selling their wide variety of products at the Market vending. Customers have been very receptive to all of their unique and high-quality items, building a loyal following of repeat customers and continuously high demand. The selection includes frozen venison cuts, ground venison, venison patties, steaks, stew cubes, venison snack sticks, jerky, and even deer antlers for dogs to enjoy. Plus, Marie also sells Buttercup Cheese products, which is a well-known 3rd generation Cheese Shop located in Central Square.
As an avid supporter of shopping local herself, Marie shares the importance of sourcing small. “Getting to know where your food comes from and how it’s produced is so important, as a benefit you develop relationships with your local farmers. I, myself look forward to Market Saturdays — catching up with my fellow Market vendors and doing my own food shopping, purchasing fresh local products not available anywhere else."
Redmond's Red Deer Farm, a women owned farm since 2021, is run by Marie Redmond. Raising Red Deer & Red Stags, their farm acquired special certification to do so, and is filling a niche in the Market to supply quality, lean low cholesterol red meat to Local Market Customers and Restaurants.
Quoting one of her regular Market customers, a dedicated venison lover, she shared, "I'm an Urban Hunter-I hunter 'till I found you-and now I come every week." Like her regulars, you can find Marie at the Regional Market year round on Saturdays with frozen venison cuts, ground venison, venison patties, steaks, stew cubes, and venison snack sticks. If you're a cheesehead like us, her booth will immediately catch your eye as it's covered in every delicious cheese imaginable.
If you've met Marie, you know she sees the Market as one big community and sees the power in vendor collaboration. "Buttercup Cheese, available at my booth, is a well known cheese brand and sought after at the Market. It's a 3rd Generation Cheese Shop located in Central Square. Together, the two companies are a great example of small producers working together. Cheddar cheeses from mild to 15 years old as well as many unique blocks and spreads. And I must mention our squeaky cheese curds as they're a customer favorite, very popular. I, myself look forward to Market Saturdays--catching up with my fellow Market Vendors and doing my own food shopping, purchasing fresh local products not available anywhere else."
