Happy Jack’s Maple is a proud farmer of sustainable agriculture, making syrup in the spring and sticking to a more seasonal schedule. After Jack’s son David was born in 2009 with Down Syndrome, Jack tried to come up with a business that he could readily participate in as he grew up, thus creating Happy Jack’s Maple in 2011. Starting from scratch with no prior knowledge, Happy Jack’s Maple produced 900 gallons of syrup their first year!
Once the temperature reaches over 38-40 degrees, the family immediately gears up and heads into the woods to check the syrup lines, looking for and repairing any leaks. The sap travels to the sugar house where it is stored and eventually runs through the reverse osmosis machine to remove 80% of the water before boiling. Depending on the batch size, it can take a couple of hours or the majority of the day to concentrate the sap and create their delicious maple syrup.
Vending at the Market for about 10 years now, owner Jack Powers shares the different types of Maple Syrup they offer making up a variety of different grades including, Golden Delicate, Amber Rich, and Dark Robust which create strong flavors for cooking. They also offer bourbon aged flavor which is aged for 6 months to a year. Also on their table is maple cream, maple candy, granulated sugar, and maple popcorn.
Jack credits the unique smoothness of their syrup to the unbelievable soil quality that the Fingerlakes offers. Jack shared that there's a huge difference between buying from a family-farm and a store. “When you buy from an individual farmers market or producer, you are supporting that family, syrups in stores blend their commercial grade maple syrup with A-grade syrup to give it an acceptable color and flavor however not a single batch is 100% grade A maple syrup. With a farmer you are getting better quality, better flavor and Grade A syrup."
