Sweet potato hash
Inspiration
One potato, two potato, three potato, hash! @east.coast.avocado has done it again, a healthy but DELICIOUS twist on breakfast. We can’t get enough of his recipes and we think you’ll feel the same.
Ingredients
1/2 cup sweet potato, chopped
1 clove of garlic
1/2 cup broccoli, chopped
1/2 cup micro greens
2 tbs cilantro, chopped
2 poached eggs
EVOO
salt & Pepper to taste
hot sauce to taste
Method
In a medium size frying pan, cook the sweet potato and broccoli on medium heat until tender
Add in garlic, cilantro, and salt and pepper. Cook for 2 minutes.
Plate the sweet potato, broccoli mix and top with the two poached eggs and micro greens. Drizzle EVOO and hot sauce on top.
