Banana bread is a staple in my family. My Nana makes the BEST banana bread and sometimes she'll add fresh blueberries into the mix. When you take a bite, your pallet immediately comes alive with the juicy blueberries and the savory banana flavors. It's the perfect loaf to serve your guests or bring to special occasions.

Ingredients
2 cups flour
3/4 tsp baking soda
1/2 tsp Himalayan pink salt
1 cup sugar
1/4 cup butter (room temp)
3 bananas, mashed
2 eggs
1/3 cup vanilla or plain yogurt
1 tsp vanilla extract
2 cups fresh blueberries
Method
Preheat oven to 350°F.
Combine flour, baking soda & salt in medium bowl, set aside.
Mix sugar and butter in a large bowl with mixer until mix is fluffy (about a minute).
Add mashed banana, eggs, yogurt & vanilla, and mix until well blended. Then add flour mixture, beat at low speed until moist.
Gently fold in blueberries, then spoon batter into a loaf pan (8 1/2 x 4 1/2 inches) coated with butter. Add additional blueberries to the top of the loaf for decoration.
Bake for 60-70 minutes, then allow to cool, slice, and enjoy!
